So lately some of you know I've been trying new recipes in order to get Addy to eat more veggies ;)
I made these zucchini-chocolate chip muffins. I loved them but Addy and Ron were just "ok" fans. My parents however, LOVED them...so as promised here is the recipe:
Ingredients
1 1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 egg, lightly beaten
1/2 cup vegetable oil
1/4 cup milk
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup shredded zucchini
1/4 cup miniature semisweet chocolate chips
1/4 cup chopped walnuts
Directions
In a bowl, combine flour, sugar, baking soda, cinnamon and salt. Combine the egg, oil, milk, lemon juice and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in zucchini, chocolate chips and walnuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 20-25 minutes or until muffins test done.

I know I told you on facebook that these were delicious, but I wanted you to know my kids tried them at dinner and LOVED THEM! Trev ate three!! I had used more chocolate chips and skipped the walnuts so they may have been a bit more chocolatey, but hey, he ate zucchini!! :)
ReplyDeleteAwesome! I know just what you're saying...I'm trying to get more veggies in with Addison. I too left out the walnuts (didn't want her to have them). I think next time I make them I may try to substitute applesauce for the oil and some of the sugar. I'm so glad you and your family liked them!!
ReplyDeleteI might try these! I make a healthy muffin recipe on Saturday evening to help our Sunday morning breakfast go easier (we're almost always eating in the car). I usually switch out sugar for honey and use half whole wheat flour and applesauce instead of oil. I have TONS of zucchini frozen and already shredded in 1 cup portions, so this sounds like a great recipe to try this weekend!

ReplyDeleteI tried these last night. I used half-whole wheat and applesauce instead of oil. They are PERFECT! Everyone likes them in our house. I realized at the last minute that I was out of chocolate chips, but I had a partial bag of peanut butter choco chips, so we used those. DELICIOUS!
